Gazpacho

Gazpacho is one of the easiest things to make, its healthy, and in my humble opinion is extremely tasty. Basically get a bunch of veggies and blend them together. The recipe I use as my base come from Elise.com. Below is the recipe with some of my more favorite adjustments (heat and flavor)

Ingredients
6 ripe tomatoes, peeled and chopped
1 purple onion, finely chopped
1 cucumber, peeled, seeded, chopped
1 sweet red bell pepper (or green) seeded and chopped
2 stalks celery, chopped
1-2 Tbsp chopped fresh parsley
3 Tbsp chopped fresh chives
8 clove garlic, minced
1/4 cup red wine vinegar
1/4 cup olive oil
half freshly squeezed lemon
2 teaspoons sugar
Salt and fresh ground pepper to taste
Dave's insanity sauce to taste (Tabasco works too)
2 teaspoon Worcestershire sauce
4 cups tomato juice

Method
Combine all ingredients. Blend slightly, to desired consistency. Place in non-metal, non-reactive storage container, cover tightly and refrigerate overnight, allowing flavors to blend.
Serves 8

It only gets tastier the longer it sits (Still yummy a week later). Look at the ingredients in this thing, real tasty and real healthy, a tough combo to find sometimes. Great for picnics! Enjoy
