Homemade Hummus ala Nicole
Nicole my favorite (albeit only) sister is a whiz at whipping up a unique and healthy Hummus from scratch. While spending some time recently with the family I took some time to extract this recipe out of her. I'm a firm believer that no two batches of Hummus should be made the same way but using this as a base will give you a great starting point.
- 2 Cans (15.5oz) of Cannellini Beans (White Beans)
*Drain them and save the juice to the side
- 5 Cloves of Garlic (I personally use ten is its close to a full moon)
- 25 fresh basil leaves
- Cumin to taste (start with a Tbs and adjust from there)
- Red Pepper Flakes to taste
- 2 Tbs Olive Oil
First drain beans in strainer preserving the juice on the side for later. In a food processor combine beans, basil, garlic, and red pepper flakes. Additionally add equal parts bean juice and olive oil (2 Tbs each works well) to the mixture. You can always add more if the hummus is looking dry. Blend until smooth. Add Cumin to taste and your ready to rock. While you can eat right away it gets better if chills out in the fridge for hours to allow the flavors to get to know each other.
