Tomato Pesto Stuffed Salmon

I saw a few similar recipes on the web, modified them to coincide with what I had in my kitchen and came up with this simple recipe.

1 1/4 lbs. Salmon
2-3 Tbs. Pesto
Small handful of pine nuts
1 tomato

Preheat oven to 400. In a bowl I mixed pesto, pine nuts, and the tomato chopped and seeded. I sliced open the salmon along its side about 3/4 of the way through. I stuffed in the mixture. I baked the salmon on a cookie sheet for 8 minutes with the skin side up, flipped, then cooked for about another 7 minutes. I'm sure cooking time will vary depending on the thickness of the salmon

How did it turn out? What side dishes did you accompany it with? And did you finish dressing it with a lemon?

My sides was Italion Bread ala Bunk and a simple salad. I'll post a seperate entry for the bread in a few.

I did not dress it with a lemon. I don't know after tasting how much a lemon would have enhanced the taste but I suppose it would be worth trying. One of the recipes I was looking at that was close to mine had the cook using sun-dried tomatoes instead of regular tomatoes. Thats why I seeded the tomatoes to try to keep the moisture from becoming an issue.

It turned our excellent in my opinion. I'd give it an 8/10. Jeff I'm guessing would have given it a 6/10 but only because he doesn't like nuts in food, apparently pine nuts aren't as bad cause they're a soft nut.
